Quick and easy lemon cake from my wife's grandmother (oma in German). She apparently had a way with cakes . This is not a big fluffy cake, it is rather thin but full of flavor.
Batter:250g Flour200g Sugar (white granulated)250g Butter (unsalted)2tsp Baking Powder3 EggsTopping:2-3 Lemons150g Sugar (white granulated)Mix the sugar and butter until creamy, then add the rest of the batter ingredients in a bowl. If the batter seems too stiff add a milk until creamy solid.
Put into 9x13 square pan, and spread evenly. 180 C until done (appox 15 minutes?). The top of the cake should be a yellow color. Remove the cake from the oven and allow to cool. DO NOT REMOVE FROM PAN.
To make topping juice the lemons and mix with sugar (sugar amount depends on how much juice you get from your lemons) until thick.
Once the cake is cool, use a fork and poke lots of holes (about 2cm apart) across the cake surface. Pour the lemon juice/sugar mix on top and use a brush to spread across the cake. Give it time to harden and then cut into squares and eat. YUMMERS!
