Great way to use up a glut of zucchini!
4 Zucchini - grated
1 or 2 spring onion, sliced finely
half teaspoon salt
1 cup all purpose flour
1 teaspoon baking powder
2 eggs - lightly beaten
Pepper to taste
seasoning if you like.
Grate your zucchini and place them into a strainer or clean cloth, then sprinkle well with the salt, mix through, and leave to draw out moisture for about 5-10 minutes.
Squeeze out the zucchini really well, it should be as dry as possible, leave to rest again whilst you mix up the batter.
In a large bowl beat the eggs, and add the flour and baking powder, mix really well until you have a nice batter without any lumps of flour.
Squeeze out the zucchini again and add into the batter mix with the spring onion and pepper or seasoning. Stir well to combine.
Heat a large heavy fry pan on medium heat and when it is hot cover the bottom with oil, when the oil is hot, but not too hot (test with the end of a wooden spoon, if it's hot enough and ready there will be little bubbles around the end of the spoon when you insert it into the oil).
Place spoonfuls of the batter into the oil, and work quickly to make a roundish shape, then leave them to cook on the first side. Carefully turn them over and cook through, they should be lovely golden brown and crispy, and they will have puffed up a bit.
Remove to paper towel and drain.
Sprinkle with herbs, or top with smoked salmon, or just eat them as they are!
