Zucchini and Potato Soup

  • My wife's recipe as she told me how she made it.

    2 medium sized Zucchinis
    5 medium sized potatoes
    1 small onion
    1L chicken broth
    2-3 Tbl Creme Fraiche (or sour creme).
    herbs and spices to taste.
    a little butter.
    Optional: 4-5 Wienerwurst chopped.

    Peel and chop potatoes. Chop zucchini and onion. Fry the onion with a little salt and butter until glassy. Add zucchini and potatoes fry until slightly browned. Add 1L chicken broth and herbs and spices (example: pepper, majoran, rosemary, or what ever you like). Boil until vegetables are soft. Use a puree stick (I can't think of the English word for it) and puree vegetables in the broth. If you like a thicker soup then use less broth when cooking. Remove from heat and allow to cool slightly then add Creme Fraiche and mix well.

    Add Wienerwurst if you want a meat in the soup. Otherwise serve hot. Goes well with dark course bread.
