Home made crumpets, a wonderful weekend or holiday project that the kids would love to get involved with! They don't actually take that long, but the batches do take a little while to cook on the stovetop or electric frypan.
Makes 12 small crumpets.
2 cups plain flour
1 teaspoon salt
1 teaspoon sugar
1 teaspoon dried yeast
1 teaspoon bi-carb soda
2 teaspoons cream of tartar
1.5 cups warm water
In the bowl of a stand mixer, or with a hand mixer, mix the dry ingredients until well combined, then add the water.
Mix well for about 5 minutes to develop some gluten strands, then switch off mixer and allow to rest for 20-30 minutes.
Towards the end of the resting period, preheat a heavy based fry pan (or electric fry pan) to medium, grease some egg rings and put in the pan to preheat also.
Turn the heat down to low, and ladle some crumpet batter into the egg rings and smooth out into the edges with your finger. Do not fill the egg rings right up to the top, they need room to expand as they cook.
When air bubbles and holes appear on the top, then cover the fry pan and allow the crumpets to fully cook through.
When they are done, cool on a rack and then they can be frozen if required for later toasting.
Serve toasted with your favourite sweet or savoury topping.

Latest batch were divine.
I bought 4 x 2 cm deep crumpet rings specially to try this recipe as I love thick crumpets and thought egg rings might be a little bit thin. I halved the recipe as there are only 2 or us. A simple recipe with beautiful results. I gave the dough a longer rest period than the recipe states. No more bought crumpets in our place. We tried maple syrup, honey, golden syrup, raspberry jam and orange marmalade on our test batch. Making a dozen next week -end. This recipe is a winner. Thank you.
