These are quick and easy and nommy yum yums! A great brunch item or breaky alternative if you prefer the savoury side but don't feel like bacon and eggs, also great for kids lunches or as a snack!
300gm (about 2 cups) Bakers Flour
20gm (about 1/4 cup) Unprocessed wheat bran
3 teaspoons baking powder
1 tablespoon dry Vegetable stock powder (or one crumbled stock cube)
1 tablespoon Paprika - sweet kind
1 teaspoon Smoked paprika
pinch Celery Seeds ground
pinch dried garlic powder
3 sprigs fresh thyme - just the leaves.
2 tablespoons parmesan cheese grated
90 gm Unsalted Butter melted or margarine or vegetable oil
1 egg lightly beaten
1 tablespoon Greek Yoghurt
100gm diced ham or lean bacon
1 spring onion or 1/2 a very small leek - finely diced
100gm Cheese - cheddar or crumbled feta, whatever you like or have.
Pre-heat oven to 180C (160C for fan forced)
Grease silicon muffin tray
Mix all of the dry ingredients together thoroughly, make a well in the centre.
Mix all the wet ingredient together well and pour into the dry mixture, fold through until Just combined.
Mix through the chunky ingredients, saving some of the cheese to top them with.
Place in oven and bake for 25 minutes until golden and cooked through.
Eat warm and enjoy .. YUM!
These are lovely with spinach and feta, or zuchini grated into them, just reduce the liquid a little if using zuchini as it has a lot of liquid that will leach out in the cooking.
