Reibedatchi or Bavarian Hashbrowns

  • This is a fairly simple little side dish (can also be served as a main dish with apple sauce). We like to make these from time to time, and I sometimes like to have them with breakfast when we are doing something a little bigger than the standard German breakfast.

    5 Potatoes (washed and peeled)
    1 Egg
    Some flour
    Some milk

    (yeah I know not exact as to be honest we don't really measure the last two items, just a little to make it stick together basically).

    Take your potatoes and wash and peel them. Then using a grater of some sort (we prefer to use our kitchen machine) grate the potatoes with the thinnest holes possible. This should produce something that looks like potato strings. Crack in one egg, and a little flour and milk and kneed with your bare hands until all is well mixed together.

    Heat up a frying pan with oil so you can shallow fry them. Using two dinner spoons take out some of your potato mixture (about 1 heaping spoonful should suffice) and put it in the oil. Flatten out the pile of potato mixture and allow to fry until lightly brown, then flip over and do the other side. Take it out of the oil and place on a paper towel or something to help absorb some of the oil and then start another (of course if you have a big enough pan you can do several at once, just don't let them burn).

    This recipe makes about 8 patties, depending on the size of the potatoes used.
